Our sparkling Blanc de Blanc is made in the traditional method and is produced from the highest quality fruit each vintage which is specifically selected to showcase the varietal characteristics and terroir of the South Burnett.
The grapes for this wine are picked 10-14 days earlier than the rest of our Semillon in order to capture high natural acidity and low sugar levels. This combination of high acid / low sugar / low pH coupled with grassy, citrus characters produces a wine of relatively low alcohol with excellent ageing ability. The wine is fermented at low temperatures in a stainless steel tank with a neutral yeast strain and bottled as a fresh, zesty youthful wine before being hidden away in the cellar to develop for a few years.
Sangiovese is the grape variety that makes up the major part of the red wines of Tuscany including Chianti and the very famous Brunello di Montalcino. While young it is packed with fresh cherries and spice notes and is known for its distinct tannins. Our 2015 Sangiovese was made aged in oak barrels for 12 months to develop complexity and structure.
