Our sparkling Blanc de Blanc is made in the traditional method and is produced from the highest quality fruit each vintage which is specifically selected to showcase the varietal characteristics and terroir of the South Burnett.
Exhibiting generous plum and dark cherry fruits with smoky chocolate overtones. It has a lovely rich texture to the palate which displays notes of licorice and spicy tannins, balanced by medium acidity producing an elegant and sophiscated wine.
Harvested, fermented and aged as separate parcels in a mix of stainless steel and oak barrels, before being blended just prior to bottling. The Cabernet is selected for its structure black fruits and herbaceous notes while the Merlot offers substances on the mid-palate with plum, spice and soft tannins.
