Rolled Oats
Plain Flour
Bundaberg Caster Sugar (*)
Desiccated Coconut
Bundaberg Golden Syrup
Beach Brewing Unsalted Butter (*)
Bi-carb Soda (Baking Soda)

Ingredients (makes 12 large cookies)

​2 cups rolled oats
1 cup plain flour
2/3 cup Bundaberg caster sugar
3/4 cup desiccated coconut
1/3 cup Bundaberg golden syrup
125g Beach Brewing unsalted butter
1 teaspoon bi-carb soda (baking soda)
2 teaspoon hot water

Method

Preheat oven to 160°C
Mix oats, flour, sugar and coconut in a bowl
Place golden syrup and butter in a saucepan and melt over low. Add the bi-carb soda
Combine the butter and oat mixtures, adding hot water as required
Place 70g of the mixture onto baking trays lined with non-stick baking paper and flatten, allowing room to spread
Bake for 8–10 minutes or until deep golden in colour
Allow to cool on baking trays for 5 minutes before transferring to wire racks to cool completely.
